Fried eggs and crushed avocado on toast
A classic breakfast combo perfect for a weekend brunch.

Frylight Cooking Spray
2 ripe avocados
2 teaspoons lime juice
Light sprinkle of chilli flakes
4 slices brown toast
- Prepare the avocado by cutting in half and scooping out the flesh into a bowl. Add the lime juice, chilli flakes and a pinch of salt. Using the back of a spoon crush the avocado and mix together until lumpy but spreadable. Set aside
- Spray a frying pan with Frylight and put over a medium heat. Wait for Frylight to go clear and crack eggs into the pan. Fry until cooked to your liking.
- Prepare the toast and spoon the avocado mix on top, finally adding the eggs. Add a twist of black pepper to serve.
